Honey is mostly made up of sugars, water, and other small amounts of substances: 

Sugars: Honey is made up of about 80–85% carbohydrates, mostly glucose and fructose. The fructose/glucose ratio varies, but honey is generally slightly sweeter than sugar because fructose is sweeter than glucose. 

Water: Honey contains about 15–17% water. 

Other substances: Honey also contains small amounts of minerals, vitamins, proteins, amino acids, pollen, and other substances. The exact makeup of honey varies depending on the geography and purity of the sample.
